To find a good quality balsamic vinegar from Modena (not traditional) is very hard. Regulations admit adding a variety of ingredients as short cuts to obtain texture and quantities. At Bellina we only select balsamic vinegars that don't contain caramel, and other additives. This vinegar is made from a blend of cooked must and selected grape wine vinegar. It is aged in wood barrels, passed on for generations (the most "recent" ones were bought in 1970. Pairings: Good on vanilla ice cream and strawberries, perfect on salads and other vegetables. Taste profile: Good balance between sweetness and acitdity. La Vecchia Dispensa "the old house pantry" has been producing vinegars for 4 generations. A family business that started with a grandmother aging her own vinegar, and then the grandfather opened a restaurant in 1973, and soon La Vecchia Dispensa just down the road. Bellina also carries two of their vinegars: organic apple saba and organic balsamic vinegar of Modena.
