La Vecchia Dispensa "the old house pantry" has been producing vinegars for 4 generations. A family business that started with a grandmother aging her own vinegar, and then the grandfather opened a restaurant in 1973, and soon La Vecchia Dispensa just down the road. Bellina also carries two of their vinegars: organic apple saba and organic balsamic vinegar of Modena. It is Handcrafted Trapani Sea Salt- Slow Food Presidium (90%), Balsamic Vinegar of Modena (10%); these two very special products are mixed together and then dehydrated through a drying process. It is a delicate salt characterized by the taste of balsamic vinegar, and is perfect over delicate vegetables and meats.
